^^ Italian cheese is still uncharted teritorry for me, but I know they have amazing stuff. I should add mozarella to my post! EDIT: Done.

Gotta love le fromage (and indeed it is 'from age').   Lately I've been digging Gruyère, and other faves include runny Brie, well aged Emmenthaler, and a good quality Cotswold.
