Explosions in the Sky is my personal favorite.  Mono and Sigur Ros are close.
of course Isis, Pelican and Red Sparowes if you count post-metal.
Honorable mentions for Maudlin of the Well and Kayo Dot for experimental metal.

Godspeed You Black Emperor, although I've had periods where Sigur Ros, Do Make Say Think, and Explosions in the Sky have been my favourites as well. Bottom line: the genre is amazing!
