Its all about opinion but...
Electric 6 string-Vigier Excalibur, Parker Fly mojo, any Carvin (smoothest necks Ive ever played)
Electric 7 string- Ibanez universe, Carvin 727, Dean Rusty Cooley sig
Electric 8 string- IBANEZ! and various customs
Bass 4-6- I really dig warwick

Does an 8-string have another string below the low B or another string above the high E?

^ and what's the tuning for 8 string guitars?
I'd use something like E A E A D G B E ... but technically the first two strings would be bass strings, so this instrument would rather be a bass/guitar hybrid than a 8 string guitar.

I thought an 8 string had 4 pairs of strings, one tuned normally and one an octave higher, like a 12 string guitar.

There are also 8-string basses built like 8-string guitars. What those are good for are beyond me though.

This is my beautiful guitar. It is my favorite for some sounds/playing. I also like my '61 Gibson Melody Maker and I like strat's for extreme non-traditional tuning.
Warr guitars, or all touch-style guitars for that matter are also very cool but I have not yet played one. They're so versatile!
