If you like bacon, you will like Chicharron a la peruana.



You put the pork in a pot (no bones better) with water only (enough to cover the pieces of pork), then after some time the water will get mixed with the pork grease (while boiling) and after the same time the water will evaporate and the pork will end being cooked (almost fried) in it's own grease with all tghe flavor concentrate when everything evaporates.



You add salt, pepper and the condiments you want and you have a delicious plate.

Can be served as sandwich with onion mixed with aji (Peruvian chili) and/or  fried sweet potato in slices






Or in a dish with what you want


Now, if you are brave enough (Or you believe cholesterol is healthy), you can eat Chicharron de cebo (Pork Grease crackings)



But the only time I ate this, was after a day of surfing (with almost no money) when I was 18, and felt sick....Despite this risk, it's pretty tasty, because it's pure skin where the flavor is.

Last night, we made pizza for dinner. It had mozzarella, chicken, fresh tomatoes and bacon, It was glorious.
 
I had left-overs for breakfast today. It was still glorious.

There used to be a Puerto Rican/Peruvian restaurant near where I used to work and shortly after they opened I invited my wife over for a lunch date and we both got the roast port special.  The skin (aka cracklin)  was perfectly crisp.  That appears to be skin, fat, and meat as well.

If you cook pork belly right, you can get perfect crackling every time (I always slow roast it, take it out to rest, remove the skin & put that back into the oven whilst the potatoes are roasting)
