Looks simple enough (aside from all the prep, wrapping it all in cling-film and multiple chilling stages). I notice he doesn't add a layer of chicken liver pate - that could be a good move since the pate can over-power the subtle flavour of the mushroom duxelle. My sister-in-law did his version for our family christmas get-together - she also did a more trad version with pate - the two peices of fillet steak must have cost her a small fortune
James Martin has a version using pancakes instead of prosciutto ham to wrap the meat before encasing it in pastry - that soaks up the meat juices while cooking and stops the pastry going soggy on the bottom (and no-one likes a soggy bottom ). Jamie Oliver has a cheaper version that uses ground beef instead of fillet - sort of a meat loaf en croûte but without the cereal binder/filler and of course that needs longer cooking and can't be eaten quite as rare as the fillet version.

Gordon by miles.....Although Jamie can probably make dry wheat taste awesome.......and Nigella who cares, the "posh dumpling" has nice looking dumplings on TV..works for me

Gordan Ramsey by a mile. They are both great cooks but I watched a Christmas Special Gordon did where he was cooking for family and friends (and cooking with his kids) and his passion for cooking is tremendous. Been trying to get to his Los Angeles restaurant as my wife is fan. She likes Nigella too but for the sound of her vice mostly. For watching someone cook cannot beat Giada (I know she is American but....)

One simple idea that my wife got from Jamie Oliver was roast chicken in the oven with grape tomatoes, olive oil, garlic (and I think he used basil, but I prefer rosemary) - she made it the other night, it was just so delicious.

I might have seen her cook stuff but I'm too busy looking at her breasts... But in all seriousness (yes I can be serious) I've watched more than a few of her shows and she's not annoying and is a skilled cook. Rachel Ray, don't get me started on Rachel. I'm sure she's a good cook but her omnipresence has become annoying.
