There's no way to stop it -- no one will likely take your keys (keyboard) away from you.... But you can edit the next morning, or even apologize -- publicly, or via PM.
It really depends on what you are usually like when drunk: happy, horny, miserable, or hostile, etc. (I tend to get silly.... and thirsty!)
 (I will here admit that I was hammered when I wrote my review of Selling England by the Pound. Still, I was happy with the result!)

My posts when drunk are usually far more interesting and amusing than when I'm sober, at least I think that as I'm typing them...
