How about the Shulman brothers. Andy Latimer as well. Ian Anderson is also a pretty good multi-instrumentalist as well as he can play acoustic guitar, flute, and possibly violin as well.

I dunno that I have a top five, but here are five that spring to mind:
Pekka Pohjola is mainly known as a virtuosic bass player, but was also a wonderful pianist and violinist. His first two solo albums showcase these talents. Tony Duhig and Jon Field together made up the classic incarnation of Jade Warrior. Between them they played almost anything you can think of. Jarrod Gosling is the singer, guitarist, bassist, keyboard player, drummer, accordionist, etc of the splendid Regal Worm. Emma-Jean Thackray plays trumpet, bass, guitar, keyboards, vibraphone and bass clarinet - also sings. She probably plays a bunch of other things too that she didn't manage to fit onto the one album she's released so far. We could probably do a separate thread on bands primarily made up of multi-instrumentalists. Gentle Giant would be the obvious prog example but there's lots more.
