Saving Private Ryan is my most epic movie. Its not like all 300 or Gladiator like, but i do believe it is EPIC and you feel like your part of something greater in the movie. Besides the epic cast of actors makes it great on its own...im not going to list them but there are literally more than a dozen AAA actors in it. Look it up.

Sticking strictly to your list I would have to say Gladiator,but after seeing 300 4 times in the theaters and literally drooling over the upcoming dvd release I would have to say it's a very close second.

Ironically, I don't really go for "Braveheart", I don't appreciate the graphic blood and gore of the modern movie. The great Alfred Hitchcock demonstrated how you could make a good thriller without the need for graphic illustration.
