Well if fusion is the same as jazz rock, which I assume it is with your entries of Mahavishnu Orchestra, Ponty, RTF, and Weather Report, I could easily list 100, as this is my favorite genre. I will leave out all the usual suspects and list only those that need more exposure.

a long way from being my favourite genre tbh. I enjoy the Colosseum 2 albums Electric Savage and War Dance as well as the UK debut album (although this is only partly fusion/jazz rock) plus the ELP track When The Apple Blossom Blooms. I also like the Liquid Tension Experiments albums a lot. I can take or leave Soft Machine and The Mahavishnu Orchestra but they are fine. The drumming is the only thing that attracts me. Arguably Elephant 9 are more jazz/fusion than anything else they might be and they are probably my favourite new discovery of the last 5 years . Not sure that they count though..

I can tell about my own interest for Jazz-Rock, if only looking at it as a kind of music and not a term, that it began in my teenage years, back in mid-70's. I had a period at that time when I only was hooked on instrumental Rock (in fact Prog) music, like Mike Oldfield and Rick Wakeman's The Six Wives of Henry VIII. Then, one day, I don't remember exactly how, Birds of Fire got to my hands - I think I saw the record at the local library, and I liked the cover. - That was at that time a very usual way for me to discover some new to me music.
Anyway, listening to Birds of Fire showed to be one of those really magical experiences, and I didn't think of its music as something else than the other instrumental music, I was listening to - certainly not as Jazz. At about the same time, I discovered Return to Forever, Weather Report, the Danish band Secret Oyster, all likewise magical, and others, and that showed to be the beginning of my very close and enjoyable relation to this sub-genre.  By the way, in fact it all began in a small way already a couple of years earlier with Hot Rats.
