Ulver's done that with just about every album.  Some of the transitions were somewhat gradual but a few of them were complete 180s (like, as in Black Metal to Acoustic Folk to Electronica to Post Rock).   It makes them interesting to follow, but it's a little creepy too.

What are the biggest transitions a band has made from one album to the next? Try and keep it so most of the members have stayed the same/there isn't a long gap or hiatus the band took (e.g. King Crimson's Red to Discipline). A couple of my favourites:

Genesis: From Genesis To Revelation - Trespass
Harmonium: s/t - Si On Avait...
The Moody Blues - The Magnificent Moodies - Days Of Future Passed
Mike Oldfield - Earth Moving - Amarok
