One Size Fits All is always my choice.  But it being my perennial choice also means many other great albums get slighted.  Even of the era, Roxy and Overnite are fine albums.  As we move, time-wise, from that era, there are many great albums, looking backward to the Flo and Eddie years as a low point (but also capable of producing the incomparable Mud Shark), and forward to Lather, where ol' FZ is just kicking ass.  The later-day Mothers (Uncle Meat, Burnt Weenie, Weasels) is incomparable.  We can all  be thankful that the guy was an absolute music workaholic.
Can you tell me where we're headin'?
Lincoln County Road or Armageddon.

One Size for me, although the actual Mothers-era for me would be the 60's and later FZ just used the name for several totally unrelated bands.

5. Burnt Weeny Sandwich (3.5 stars, though Little House I Used to Live In is surely Zappa's first true masterpiece)
6. Bongo Fury (3.5 stars)

The other albums, I either haven't heard them that much(Uncle Meat and Weasels) or just don't like them(We're Only in it, 200 motels).

If you are a fan of jazz, you really should check out Uncle Meat again. I didn't like it for the longest time, but then after hearing a lot of jazz (and playing a lot of jazz), one day it clicked and it is now probably my favorite early Mothers album.

I didn't say I didn't like Uncle Meat, in fact I liked it, what I did say was that I haven't heard it enough to form a concise opinion about it.

I know, I was just suggesting that you become more familiar with it!

Burnt Weeny Sandwich gets my vote - some superb proto RIO instrumental rock bookended (for some inexplicable reason) by two spot on doo wop covers.

I'd maybe rank them like this:

1.  Roxy & Elsewhere
2.  The Grand Wazoo
3.  Absolutely Free
4.  One Size Fits All
5.  Weasels Ripped My Flesh

Man, Frank made a lot of great albums, didn't he?! Probably more than anyone else...

When I'm lunching my father used to put 3 types of music, or Brazilian Popular Music to make mom happy, or jazz, or Over-nite Sensation. So the album was a important part of my life. Unfortunately Zappa rarely is playing on my house now, just when I'm alone.

One Size Fits All.  "Inca Roads" alone puts it at the top of the list.
Overnight Sensation gets special mention.

And of course, the first 3 albums are brilliant  ("... MOM, I TORE A BIG HOLE IN THE CONVERTIBLE!")

Another vote for Roxy and Elsewhere with Freak Out a very close second.

This thread is a great reminder that I really need to get myself acquainted with The Great Wazoo. I'm a relative newcomer to Zappa's much who is trying to catch up.
