From a more objective point of view: either Caravan's In The Land Of Grey An Pink or Hatfield's Rotters' Club. Caravan's album is the first Canterbury masterpiece IMHO, but Hatfield perfected the Canterbury sound and arguably they made the ultimate Canterbury - album.
Butbutbut... my favourite album is... Of Queues And Cures by National Health.

Rotters club and In the land of the grey and pink are classic remasters. Some of the bonus tracks are great. I don't care for Gong. I have Flying teapot and Angels egg and I thought they were pretty weak compared to most 70s prog

I quite like the Canterbury Scene... my favourite band from the lot is probably Gong, but Robert Wyatt's Rock Bottom is most definitely my favourite album. I'm in love with it.

I hadn't heard Matching Mole second in 2006, Cesar. I guess I prefer it to their debut now that I have. Rock Bottom is still my favorite. I would have made place for Cos (one of my favorite bands, for the two last years) and Moving Gelatine Plates as well.
