In terms of reviewing an actual full-length work, I don't have much of a problem with it... However, in terms of actually reviewing singles and small EPs, how does that work?
 
Do I review it 'as it is,' or do I review (and rate it) as I would a studio album?

Depends on whether it was made in a studio or live.  An EP if of original material should be reviewed as an original album.  I'd say the same for a single.  Still you must come up with the minimum amount words. LOL

Released date are often when it it impacted you but recorded dates are when it really happened...

Well... say for example, a song is just a single off of an album... but the song is absolutely amazing. Do I review the 'single' for the song, or the actual 'single' product?
