What would be some great songs to cover by myself I can probably do any drums but lets make the bass easy (LIKE REALLY EASY) no guitar and The keyboard at about an intermediate level

...never mind.
often, very easy bass means not so interesting drums. So it's hard to find nice songs matching your criteria (+ no guitar...)

I cut my prog teeth playing songs from the Strawb's album "Hero & Heroine," especially the title song.

Eno is certainly approachable, toss on "Baby's On Fire" for a hoot!  (don't attempt the guitar solo unless you are immortal).   I've also covered Eno from "Before & After Science," very playable!

Just play, you'll get better!  I now routinely warm up to "Close to the Edge" on bass in order to shake off the rust.  Good luck!
