We use them here as part of a chicken recipe. "Pollo arvejado". A mild fried onion / carrots base, then the chicken pieces until they turn a bit rusted, a bit of red wine, a bit of water, sault, as many green peas as you like. When ready and served, you add the "french" fries, cuted in little cubes.
Northern people of this country eat them with mayonese.
Ther is another recipe, from the center of the country, called "Chorrillana". A lot of fried onion with egg, plus cubes of fried cow meat, saussages, and an equal amount of fries.

You need to watch Pulp Fiction. It deals with the whole USA/Europe fries and ketchup/mayonaise thing.
Interesting how the Americans call them French fries; I thought that they were a Belgian invention.

Curly's Fries in Wildwood, NJ need no such accoutrements - frying in peanut oil is the key. I'm sure other versions of "boardwalk fries" are similar. Everyone in the mid-Atlantic US knows what I'm talkin' about.

I love these boardwalk fries in Ocean City,Md. called Thrasher French Fries,they are served with vinegar and are AWESOME!!!!!

I still think that you can't beat genuine British chips from an old style Fish and chip shop. Proper sized chips sliced from real potatoes and fried in dripping or lard. Lashings of salt and vinegar and you can't lose.

If I can ever make my way to England again, I do intend to have "real" fish and chips, one of the finest inventions to come from the mother country.

Usually just salt but sometimes salt and vinegar. The sugar in ketchup just doesn't work on fries for me.

When my wife was pregnant with our first child she would take McD's french fries(they HAD to be from McD),and would dump them all into a hot fudge sundae and eat the whole big mess.
That was her big craving,it really used to gross me out.

Seriously, next time you're at Wendy's just try it. The combination doesn't have a very distinct taste, but I find the contrast in temperature and salt/sugar great!
And I haven't eaten at McD's in a loooong time (except for maybe breakfast. Love their has browns). I really think they're disgusting for the most part.

I was thinking of this poll when I was in the USA for the holidays... I don't usually eat fries when I am at home in Italy (I'd rather have roast potatoes, which IMHO are much better), but I did quite a lot back then - and dipping them in ketchup of all things! This might not sound very surprising to you, except for the fact that I normally hate ketchup... Am I already being brainwashed?

On the few occasions I eat the things these days (and they have to have been bought from a proper fish & chip shop), it will wither be with huge amounts of salt and some ketchup, or if I'm feeling really bold & dont mind a sore botty in the morning... this stuff:
