I didn't even realize that Matthew Fisher played mellotron, or was this after Procol?  Which songs did he play mellotron on?

As far as I know, he wrote and played Whiter Shade Of Pale's famous intro, and other Bach inspired pieces, like Repent Walpurgis. He also sang the lead on Pilgrim's Progress. Brooker was rather in charge of the piano stuff.

but that's all on organ isn't it?  Procol was pioneering in their piano/organ combo.

Mike Pinder without a doubt. Matthew Fisher is an orgainist. Now if you'd have pitched Mike Pinder against Woolly Wolstonholme (of Barclay James Harvest) you would have had a real scrap for the last piece of pudding..
