There are many more, I know, but these were the ones I could think of right away. Some of these covers are more famous than Dylan's original versions, but in most cases I personally prefer the original myself - with one notable exception.

Will go with Jimi's All Along the Watchtower.

And... why not put a Manfred Mann cover in - he did many Dylan songs...
Saw them on this tour in 1998 and it was a great gig: Manfred Mann's Earthband - Father of Day, Father of Night:

I thought of The Mighty Quinn, but to my knowledge, his version was actually released first, so I don't know if it counts as a cover.

Without a doubt Jimi Hendrix's version of "Watchtower".

Always had a soft spot for Manfred Mann's version of "Mighty Quinn":

The classic interpretation of "Mr. Tambourine Man" is actually credited to the amazing vocal duo of Kirk And Spock.

Hendrix is the obvious choice here, so I've gone for Harrison.

The Band of course did several nice versions and cowrote a few with Dylan,,,I Shall Be Released and This Wheels on Fire.
The Byrds also did All I Really Want...and My Back pages ....as well as many others.
Manfred Mann earth band did an even heavier version of Quinn on Watch.

For this poll I also considered some examples of Bob Dylan in a different language, but I imagined that few people would know these versions.

First: The Swedish singer/songwriter Mikael Wiehe was very influenced by Dylan, and he has made several recordings of Dylan songs with his own translations. Here, f.e, is his take on "Boots of Spanish Leather":


And here, Steffen Brandt, singer and songwriter of the Danish band Tv-2, who similarly recorded a solo album with his own translations. This is "Ballad of a Thin Man".

Crazy poll ... Mannfred Mann with no Mighty Quinn?

But, yeah, Jimi's version of All Along the Watchtower will likely be the best of them all ... a truly wonderful design of the use of the guitar in the song.

Also very far out and neat, are Sandy Denny's versions of a lot of Bob Dylan songs ... that should have been in the poll were it better researched!

As mentioned, Manfred Mann is not included because I think his version of "The Mighty Quinn" came out before any version by Dylan himself was released (the first one was on Self Portrait if I am not mistaken), so I don't know if it counts as a cover.

As for me personally, I prefer the original version of Watchtower. I think its stripped down aesthetics fits the mood of the song better. My vote went to George Harrison.

Special mention here for Manfred Mann's cover of "You Angel You".

It's on the Angel Station (1979) album.
