If you want to trace their evolution from a proto-prog-metal band to a full-fledged heavy metal machine, get Sad Wings of Destiny (a masterpiece), Sin After Sin, and Stained Class. They became progressively heavier and more streamlined with their following albums, with the notable exceptions of the mellower (and in my opinion excellent) Point of Entry, and the AORish Turbo.

I think that Sad Wings, British Steel and Painkiller are essential - they cover their early prog-related phase, the NWOBHM and the modern metal (Thrash) influenced later albums.

'Painkiller' and 'Defenders Of The Faith' are essential...

You can start with Nostradamus, which I believe was just released.  You also left off Angel of Retribution which is the return of Rob Halford.  The last song on that album LochNess clocks in at 13:29 and is a phenomenal prog metal song.
 
Rocka Rolla through Sin After Sin have their prog-related moments with Sad Wings and Sin After Sin being the better albums, although I like Rocka Rolla as well.  My first Judas Priest album was British Steel from which you are already familiar with Breaking the Law and Livin' After Midnight.  I grew up with the Screaming for Vengeance through Turbo phase so that is what hooked me on Judas Priest, but although it still sounds great to my ears, I am sure there are those that would say that they are tainted with that 80's sound and production. 
 
However, when it comes to getting familiar with bands that I am not familiar with I always prefer a compiliation or live album to get a taste of a band and you can't go wrong with Priest...Live which is a 2-CD live set and is probably a good place to get a taste of their early to midperiod sound.

Nice to see someone else doesn't see Point Of Entry as their early 1980's low-point - great album (Desert Plains is still one of my favorite Priest songs).

The trio of Sad Wings, Sin After Sin & Stained Class are all faultless albums & to my mind, Unleashed In The East (or depending on how cynical you are, Unleashed In The Studio ) was one of the last great live albums of the 1970s - just too short (no 'Beyond The Realms Of Death' or 'Starbreaker' - both live highlights of their shows in '78/79...).

I have to say, I started to lose interest in JP after 'Defenders Of The Faith' came out (I think they got stuck in a bit of a rut, personally), but before then, classic British heavy metal.

Sin After Sin! and then Sad Wings of Destiny.  Both are great albums.  Stained Class was pretty disappointing.

I ordered a 3CD-box with "Brittish Steel", "Point of Entry" & "Screaming for Vengeance".
I think i'll get "Sad Wings of Destiny" next! Any comments?

I'll go with the first Priest album I bought, Screaming for Vengeance.  That's a nice one to work backwards/forwards from.

Sin After Sin , I saw Priest in there early days supporting Budgie and they Blew them away, but it all became a bit Spinal Tap in the 80s ,

Yes that's my favourite too and most of my other preffered albums would be before that though Angel of Retribution was a good return to form with Halfords return. Just got the new one, Nostradamus but too early to tell where that's going to sit in my Priest favourite list.

"Unleashed in the East": A perfect introduction to their late 70s work. This much-lauded live record is more effective than a compilation because it circumvents any redundancy. What's more, the energy on here is tremendous, the production is great and the song selection is top-notch. A great intro.

"British Steel" or "Screaming for Vengeance": Wanna know 80s Priest? Try either one. You'll have a blast and you'll get a good idea of where the band was going.

As a beginner, avoid: "Priest... Live" (a pretty weak affair, overall), "Turbo" (great pop metal album loaded with amusing hooks... but not the place to start) and "Rocka Rolla" (get this only if you dig Nazareth or Sabbath)
