I like a lot of non-prog music, but most music that isn't prog that I like isn't rock :)

Jazz:
Miles Davis (Especially his avant-garde fusion albums, see "Bitches Brew")
Big Phat Band
Eric Dolphy (His "Out to Lunch" album is fantastic, any open minded person should give this a listen)

Electronic:
Squarepusher
Aphex Twin
Autechre (Very angular nowadays, probably not where you want to look for your first electronic experience :)

Classical:
Steve Reich
Philip Glass
Yes, I love minimalism :P

Like a lot of Psych,really fond of Jefferson Airplane,Love and Andwellas Dream.

Free are really good,one of the ultimate blues rock power house bands of the late 60's early 70's,and the Climax Blues band done a few good albums.Edgar Broughton Band,touches a nerve.
 
Patto.....a real soft spot for them.More jazz based but really excellent.
 
Nick Drake,strange,but he's grown on me over the last couple of years.
