It can still sound great. Hands on the faders, playing with stereo, some reverb. The playing should be great. The song HAS to be great. 

Is there a prog sub-genre for this organic type of music?

If you know of a song or an album on YouTube that's in the ball park, please post below... There would be nothing better than (good) music produced, and not knowing the year it was made, where it wouldn't surprise me if it was made in 1970 or a week ago.
