I'd have to say Brussels sprouts, though I once made creamed onions which are fantastic. It's easy -- Peel a bunch of the little pearl onions, simmer them in chicken stock till tender, add some half & half and simmer at a low heat until thickened a little. Put in salt & pepper to taste and just a small pinch of nutmeg. Boom! |

Ooh, that does sound awesome, David.
The stuffing recipe dates to the 30s (at least) in our family. I've managed to recreate it a few times with reasonable results, although I've never nailed the flavor and consistency as perfectly as the elders. One thing is they used to make it "in the bird" which I've never tried. Not because I'm afraid of food poisoning (hey, I'll eat soft eggs with glee), but for convenience I use glass casserole dishes. Or as we call them, hotdish. I also need more experimentation with quantity of turkey giblets to include....I have Dad's handwritten notes, but they are light on specifics. ^ Tasty stuffing is harder than one would think, the flavors have to be developed or it's just bread with vegetables & broth. You're on the right track with giblets. I remember when Alton Brown was convinced that stuffing a turkey was evil: it drew juices from the bird, and undercooked stuffing could cause illness. But I think if you do it right it's fine. I still need to pick up some nog, and a nice sweet potato pie from our local bakery. |

I like stuffing (or dressing, cooked outside of the bird), which I make a little different than most. I use bread cubes, black olives (my grandfather's Croatian way of prepping dressing) and water chestnuts. Lots of onion, of course, and celery.

^ I needed to put more onion in my stuffing this year. And one thing my mom used which I didn't, and adds great flavor and moisture: prunes. Yep, prunes. Apricots too. |

We always celebrate Thanksgiving with some American friends, here in the UK. My favourite side is green beans. They always do them fried with shallots, pancetta and garlic. Really good! Sweet potato mash is yummy too.
I also love pumpkin pie! Why has that never taken off here? |
