That's not the one I meant - what you're referring to as gig-chees hasn't aged at all, comes out of large factories that use steam dryers to ripen the cheese and then ship it off. If you'd give it time to ripen and age, it will taste a lot better, and you won;'t be able to slice it. |

As with many things in life and lunchtime, there is cheddar and there is Cheddar - for some bizarre reasoning of bureaucracy, real Cheddar cheese doesn't have whatever the cheese equivalent of an Appellation contrôlée is, so any old tat manufactured in a pasteurised factor thousands of miles away from Somerset can pass itself off as cheddar. The real stuff is pale yellow, almost white in colour, not orange (which is just colouring), is crumbly and has a sharp tangy flavour that will bite back.

though i'm no expert on marriage ...i know you have to work at it ...it must make things interesting coming home not knowing what colour your wife's hair will be that week...
