Borscht
In a heavy stock pot or roaster lightly brown some chopped onion, garlic, and pork, lamb or beef in olive oil. Add a head of cabbage, 2 ripe tomatoes, a bunch of beets, all chopped and saute lightly. Add about 3 quarts of beef stock, 1/4 cup red wine vinegar, the juice of half a lemon, a bay leaf, salt & fresh-ground black pepper to taste. Bring to a boil, then turn down and simmer covered for 1 to 2 hours. You can also chop the beet greens and add them just before it's done.
Serve with a nice dollop of sour cream, maybe some fresh chopped mint. One of the best things in the world.
