Argus, but it's not a knight. It's a Greek warrior (a hoplite, I believe).
But Argus is one of the most perfect albums ever recorded. There's not a bad second on it.

Correct - he's a tiny knight but he is definitely a knight killing a Gryphon

Gryphon's "ReInvention" also has a knight on the cover (of sorts - mythological)
