Each of their songs has something "signature" about it in my opinion, they all stand out from each other. With that said, I would recommend any of the albums. But if you like, I will  present to you two options (kind of like the red pill or the blue pill thing).

*If you decide to take the blue pill you will immediately pick up the album "Damnation" and embark into a mellow and slightly psychadelic journey reminiscent of earlier 70's prog.

*If you decide to take the red pill and chose the others (Orchid, Morningrise, My Arms Your Hearse, Still Life, Blackwater Park and Deliverance) you are brave enough to be cast out on a line into a strange, lucid river in which the water sits still and then moves swiftly into a fathomless deep. Here you will feel a strange relaxation in this unbelievable torrent, but be wary.

Really nowhere is a bad place to start, but start with an adventerous sense and be willing to explore more than one album. Opeth is erratic as a porcupine in a seizure.
