Vietnamese cuisine is amazing, must be the French influence, I think it blows away Thai and Japanese

Yep.

When I was a kid I had a Vietnamese friend, whose family had just escaped Saigon in '75.   His mother would make this truly authentic food that just knocked my socks off.  To this day, I've never tasted an eggroll that had the flavor that her homemade ones had.  I'd kill someone with my bare hands for a plate of her eggrolls.

Oh those imperial rolls are my favorite, with a little sriracha and some hoisin sauce.

Oofta.  I'm dying for some now.  Unfortunately all we have is the trendy Thai places.  The only good Vietnamese is across town, and I'm wasted, so that isn't happening.  Off to the kitchen for a sandwich now....oh wellLOL

Couldn't agree more. I love Vietnamese food to death, especially the noodle soups - and not just pho, which is my go-to lunch during the winter. Here in Northern Va there is an amazing Vietnamese shopping mall by the name of Eden Center, and the restaurants there are to die for.

^ You're lucky, we have some great Vietnamese restaurants but no shopping mall, though our world-class Chinese markets suffice when I need some nuoc mam.
