Europe, before they became a slice of 80's cheese they were a pretty great melodic heavy metal band. Those first two albums are great, as are some of their newer albums like Secret Society. They brought back the hard-hitting melodic metal on that one.

I guess I'm not that big on any of these (some started very strong but went to sh*t). I found Alabama the most overall enjoyable, yet their highs don't go as high as say Boston or Chicago nor do their lows go as low as those bands in their later years.

Hmm, not sure which of those bands I like the best. U.K. and Boston both stand out for their debuts, and Asia to a lesser extent. Kansas also had some great tunes. I'd also throw Oregon into the loop.
