I checked all the suggested documentaries above here on this forum topic and no one mentioned Seven Ages of Rock, this is a brilliant BBC documentary composed each of six 60min episodes and the 7th one is 90min. 
If you liked ProgRock Britannia especially Bruford part, you'll enjoy this one I am sure. Here's a snippet of one of my favorite episodes, very funny how Phil Collins describes the first time Gabriel decided to appear on stage wearing a fox on his head and a red dress.

A documentary about the Canet Rock Festival 1975 in the Catalan (Spanish) town of Canet, regarded as "the Catalan mini-Woodstock".

Not too Prog, there was a really Eclectic mix of Folk, Jazz-Rock-Fusion, Prog-Rock, Flamenco etc. Important is to consider the historical background, this happened while fascist dictator Franco was still alive and in power (he would die a few months later) and it's a nice document of the revolutionary and hippie youth movement in Spain in those times.

There's too little filming of the actual music performances and too much interviewing in Spanish / Catalan which will put non-Spanish viewers off, but it's still an interesting document. Musically some of the most recommended sections are:

0h17m   Barcelona Traction:  a great JR-F trio of keyboards, bass and drums.
0h32m   Iceberg:  one of the top Catalan JR-F bands ever
0h43m   Pau Riba:   "the Catalan Frank Zappa", he was totally nuts LOL
0h54m   Orquestra Mirasol with Maria Del Mar Bonet: the pioneers of Catalan JR-F with one of the most celebrated Catalan female Folk singer-songwriters in a one-off performance, they would never play together again.
1h04m   Companyia Electrica Dharma: one of the biggest Folk-Jazz-Rock-Fusion Catalan bands, with theatrical elements included.

Thanks to a Beardfish live concert DVD I had to check out the Nord organ.
Don't know if this counts as a documentary though but I'm very impressed.

Nord keyboards seem to be among the best currently available for Prog music keyboardists (I mean, especially for those with limited budget, if you are Jordan Ruddess it's probably a meaningless point).

Of course in a world were frequently sounds are just sample sound patches in an audio workstation and the keyboard is just a MIDI controller the keyboard itself has lost importance, but still for direct live playing Nord seems to have done a very good job.
