I don’t have the time to find the gazelle right now, but I’m pretty sure I have found the right man: Piri Reis. The fifth pillar is the hajj/hadjj and the pink hibiscus (I should have known!) is Rhodes.

Well done again! The gazelle referred to gazelle skin parchment, of which the famous Piri Reis map was made. You found the other hints correctly. The man's proper name was Haci (=Hadjj) Ahmed Muhiddin Piri, active until his mid-eighties.
