I suspected that this word might be what it is, although it could also be the place where I spent my holidays 7 times recently. Did she have something to do with wine? Might it be Mme Barbe-Nicole Clicquot-Ponsardin (1777-1866), aka Veuve Clicquot?

I admit that the nightingale is a bit far-fetched. It refers to the opening lines of Keats’ Ode to a Nightingale:

My sense, as though of hemlock I had drunk

I did not know the poem - did you write it yourself? I must admit that I did not read the content well enough until this morning (yesterday I was tired to death) and then I saw that all the lines could be applied to Champagne (the first thought of wine came on "not for Merlot" - Pinot Noir and Chardonnay are used in the region - and after the fifth hint I started to read the first letters); the name of Veuve Clicquot came to my mind when I wrote my previous post. Anyway, I have to go now. I'll come up with a new one when I'm back.

I wrote the poem especially for this game.
Not for children – alcohol is not for minors, and as far as I can see she never had any children.
Not for hot – her disgorgement method includes freezing the wine near the cork – plus, champagne is traditionally served chilled
Not for ascetics – champagne is hardly a part of the lifestyle of an ascetic
Not for Merlot – you’ve already guessed that one
Not for poverty – she was a wealthy woman, and champagne is an expensive drink
Not for ale – ale is a completely different drink associated more with Britain than France
Not for grumpiness – champagne is supposed to make you happy
Not for the nightingale – I’ve already explained that one
The last line is only to finish the poem.
