Present Ruins Fantomas Acid Mothers Soul Collective (pick any specific one if you must ;P) I was tempted to include Art Bears but they started around '78ish - that's still after the proper prog era but I decided to play by your rules. |

Can't really decide on 5, but those are at the top for me (some releasing one-two albums only and still):
Taal - no need to present them, their two albums thus far have been original and thrilling. Their third one due this year is one of my most anticipated this year. Opeth - No introduction needed.
Hidria Spacefolk - In short time, these space-rock with an electronic edge have captured my attention and with their two albums and one EP. Their new release Symetria is another one I anticipate a lot. Nemo - No weak album with these guys. Exciting rock. Agalloch - Same as for Opeth and Taal. Eider Stellaire - Recorded 4 albums of which only 3 released in the 80's and each one is a very good Zeuhl effort. Present - At times I prefer them to UZ. Great musicianship, and mind provoking compositions. Virgin Black - Some say weird and quirky; well, yes, but for me, unique and emotive. Looking forward to their Requiem trilogy to be released this year and the next. In the Woods - Omnio is one all time favourite but their other releases are of high qulaity as well. Nil - Only their two last albums, but what releases are those. Recently got to know Syrinx after two people recommended it to me - Uroboros and Benjamin from Nil and Syrinx. Wow! Anglagard - Same as Taal, Opeth and Agalloch. Neurosis - Yes, I love their tortured sound, depressive attitude and Souls At Zero, is still my favourite of theirs.
Other worth mentioning (might have released only one album):
Anekdoten - Same as Opeth, Taal, Anglagard...
Pelican - Still haven't heard the latest release, but their two previuos ones, while not masterpieces, are energetic and powerful pieces of music, ranging out there between the domains of metal and post-rock.
Subterranean Masquerade - Eclectic, excellent, unique. Metal, is there yes, but to call this prog-metal is to miss what they are about. GYBE - Same as Opeth, Taal etc. Maldoror (Fr) - Only one album thus far, but both my wife and I agree - they created a modern near-masterpiece. You are missing one important piece if you don't speak French as the lyrics here are a major part of the album. Borknagar - Well, not the most groundbreaking but still effective ex-black metal gone to explore other territories. Deluge Grander - Only one album and hopefully there'll be more, but this album was one hell of a highlight of 2006. Cerberus Effect - The previous Britton project. You can read my review of Acts of Deception to see what's it about Agnus - One release only for this Argentinian band in 1980, and it's a shame. Great symphonic rock album.
Yugen - This too is one of the highlights of 2006. Exciting RIO/Avant super-group effort.
Panzerpappa - One possible future of the sound of RIO? Expect a special feature with this band soon.
Sorry to impose on you with all these bands... I just can't choose only 5...

^^^Why Deluge Grander is probably the sole album, Assaf ?? Do you know something about the developments within the band which would prevent them from further works ??? It would be quite sad actually....

It's not substantiated, but I think he'll move on to other projects (like the current Birds & Buildings which is going slowly but steadily). I reckon that it'll be like Cerebus Effect relative short-life span.
But I may be totally off, so don't take my words for granted, of course. The rest of that post, should be the main part.
I'll edit it out, to not start rumors.

I don't think I have anything else recent, but I think a lot of comtemporary Symph prog is pretty substandard and derivative.
