Yoda, no question. The "Force" philosophy is the backbone of the story, and he is the wisest, most knowledgeable expresser of that philosophy.
Darth Vader is a close second. Possibly the greatest "villain" ever created for film (so sorry, Hannibal Lecter...)

Boba Fett had all the coolest weapons.
The puppet Yoda from the old Series was cool too, the new CGI one sucks and's so fake.
