I forgot to include Great Big Sea's Road Rage in my selection. Not prog but absolutely amazing pop/folk. Their version of Mari-Mac is the fastest singing I've ever heard!

Ah...there's so many.  Currently a favorite of mine is "Friday night in San Francisco" by Al Di Meola, John McLaughlin and Paco De Lucia.
