Try these, in no particular order.

Le Orme - "Felona e Sorona", "Il Fiume", "Elementi"
Premiata Forneria Marconi (a.k.a. PFM) - "Storia Di Un Minuto", "Per Un Amico", "L'Isola Di Niente", "Chocolate Kings", "Ulisse".
Banco Del Mutuo Soccorso (a.k.a. Banco) - "Banco", "Darwin" (both in the original and remixed versions of 1991), "Come In Un'Ultima Cena", "Il 13"

Cerea.

here are some good italian prog recommendations :

celeste -s/t (also called 'principe di un giorno', acoustic album with a 'cozy' mood)

deus ex machina - 'de republica' (only if you like fusion)

fabrizio de andré - 'la buona novella' (it features members of a band that will later be named PFM)

banco - 'io sono nato libero'

PFM - 'per un amico' (their absolute masterpiece)

carnascialia - s/t (nice folk-prog album but the vocals are sometimes disturbing)

Osana -Palepoli- (a fascinating band in the genre of King Crimson & VDGG + an addition of folk arrengements

if you really want to get in touch with a-typical and most original Italian prog sound I advise you to listen to Picchio dal Pozzo and their melodic jazzy "psych" fusion.

Museo Rosenbach -zarathustra- (finest and effective prog rock compositions with italian lyrics)

Though DD are certainly better than anything usually associated with Italian Prog :P

I personally went to the Italian Prog index on this site and checked out MP3s by all the bands who had an album in the top 25.  It included all of the bands mentioned above and gave a great insight into what to expect from them and the sub-genre as a whole.  My personal faves are:

PFM - per un amico
Museo Rosenbach - zarathustra
Banco Del Mutuo Soccorso - darwin
Le Orme - felona e serona
Celeste - principe di un giorno

italprog, like everything else, has lots of flavors...

the best recommendation i can give you is augusto's - www.italianprog.com  - he lived it, and he's a very friendly indiuvidual to answer thoughts you may have - check out his top '20'

i have a little over 600 ital prog releases - if i can help you out, let me know...
