What do most people write on (and yes, I know
people mostly write on paper)
As a guitar player primarily, I write most on that
instrument, in a variety of tunings, but I find it
sometimes limiting and despite being a thoroughly
awful piano player I'm trying to focus on that
instrument more and more.
Does prog lend itself to composition more on
keyboards or guitar?

That's a good question.
I've often tried to question that myself. Though some would argue that
prog wouldn't necessarily be prog (specially symphonic prog rock)
without the keyboards and/or organ.
Though compositionally, personally, I'd find it easier to compose with
the piano rather than figures it out on the guitar. This is possibly
because I was more of a piano player before I got into guitar, and
still sort of am.
Perhaps the complexity of prog music is easier to capture on piano
because the keys are so easily accessible. So I'd say keyboards
