I'd go with Talking Heads, they were sort of an entrypoint for me concerning 80's music. They were fantastic live and in studio, with 77, Remain in Light, and More Songs About Buildings and Food being my favorite studio albums.
I used to not like Roxy Music because of Ferry's singing, but I've gotten used to it now. Their songs are good, and their albums surprisingly consistent. The only song I've heard that really sticks out to me is Virginia Plain, which is just as good, if not better, than most of the Talking Heads' stuff.

Never really noticed before, but Roxy is listed as crossover prog while the Heads are listed as prog related.
Not that I have ever been able to determine the specific difference between the two categories....and yes I have read the page info/description several times. (only mentioned it because of the recent discussion going on about XTC regarding these categories..)
At any rate that video clip above of Byrne is enough to make me choose Roxy every time.

Maybe Roxy is more progressive, but personally, I've been listening to Talking Heads with my family since I was 2. Both of these bands have a special place in my heart, and therefore, I choose both
