This may be a bit odd since theres a very extensive solo in it already, but one of my favourite songs to jam to is Watermelon In Easter Hay by Zappa.

I play the tablas and other assorted handdrums and my flat mate plays the guitar, so we often jam to Planet Caravan by Black Sabbath.
Maybe not the most rocking thing, but it works.
If you want something a little more rocking and have access to a mad drummer, then there´s some really cool grooves that you can elaborate on in this one:

“The Guide says there is an art to flying or rather a knack. The knack lies in learning how to throw yourself at the ground and miss.”

Phish - Reba
Phish - You Enjoy Myself
Phish - David Bowie
Phish - Ghost
Phish - Tweezer

not only are they very proggy tunes, but they contain great extended jam sections. Make sure they are live versions.

But I think I know what you're really looking for, and I would suggest getting anything by Miles Davis from 1969 to 1975. Also check out some John Scofield, like his albums Uberjam, Loud Jazz, and Pick Hits Live

Does anyone know some more cool jam tunes like Red Baron, Stratus, Cissy Strut, Hong Kong Inciden, or just anything that you like to jam to ... I'd be very thankful to any kind of response:)
