Autumn by the Strawbs: excellent example of their peculiar mellotron drenched classic compositions.
 
Of the newer bands I would like to recommend an italian band that has just released their magnum opus:
 
La Maschera di Cera is the band, LuxAde is the wonderful album, rich of great keyboards, synths and, above all, MELLOTRON!!
 
I never recommend enough this band. Fortunately there are many strong supporters, here (Erik in primis).

I would say the whole suite House of Four Doors pt1, Legend of a Mind and House of four Doors pt2, drenched with mellotron and the wonderful mellotron at the opening of the third door.

Album-wise, Rick Wakeman's mellotron work on Yes' Close to the Edge is perhaps unsurpassed.

Below is a link that will provide a nice summary on the mellotron.  In short, it was a keyboard that sampled sounds of orchestral instruments and choir voices.  However, each key could only be held down for about eight seconds because the tapes on which the sounds were recorded were linear, not looped.  The mellotron created, what I call, a surrealistic sigh.  Unfortunately, one of my students once asked, "What is that screeching sound?"  I hope that this helps.

Well, Stuknipuppa, the last week many reacted on my thread "A big hand for the Mellotron', it contains lots of information and interesting links to search for details about a Mellotron so have a look ...

My favorite Mellotron tracks (out of my head): Zarathustra by Museo Rosenbach/Alanderie by Fantasy/The Scene Of Pale Blue by Outer Limits/all tracks on Barclay James Harvest Live (1974) and Schicke Fuhrs & Frohling Live 1975/Tide by Greenslade/Karelia by Anekdoten ...

Mellotron drenched new albums: LuxAde by La Maschera Di Cera/Gentry by Red Sand/La Meccanica Naturale by Finisterre/Nostos by Ubi Maior and Endgame by Like Wendy
