Arguably the most influential: The Shadows!! How many guitarists picked up the guitar and twanged out Apache before going to bigger & better things? At Fender's tribute to Hank Marvin, Jeff Beck and Eric Claptonalpton amongst many others did the honours, also check out the review at:

http://users.tkk.fi/~khagelbe/rory/jf/Dino.html

Check out the tribute abum to the Shadows & Hank Marvin, Twang and you will find  Neil Young, Randy Bachmann , Peter Green and many others recorded Shadows covers.

For me the best non-prog bands of the '60 are:

1. The Doors (should be recognized as proto-prog!)

2. Creedence Clearwater Revival

3. Jimi Hendrix Experience

The Kinks would be my number one, after that I'm not really sure who I would include...

If you limit it to three:

Beatles, Stones, Who

It's difficult to choose just three bands but at this moment they would likely be

1) Rolling Stones

2) Kinks

3) Beatles
