For everything you post there are some primary privacy settings: you can set for your friends and them only to see what you post; you can allow their friends, too; and you can allow everyone. Also, there is a very thorough Privacy Settings page which you should check out at some point, after you become aquainted with the thing.

RE the pics, if you upload all the pictures at one time into an album, it will show that you uploaded the album, not every pic from it.

Yes, but much more. For example, if a friend writes something on his Wall, you will see it on the News Feed of your Home page. Also, you will see that Facebook does a nice embedding thing with links posted on Walls.
