Mars Volta albums are tehnically double albums if you compare the length of their albums compared to most album lengths in the 70s.

I am quite surprised nobody mentioned ELP's Works vol I . I think it's a great album.
All my other choices were mentioned - The lamb, Tago mago, The wall (although I agree it's miles away fom their superior albums such as WYWH, Animals or AHM), Third and above all 666 !

Of course, The Lamb (my favourite album of all time), and also The Wall, and, I would probably place Topographic Oceans up there too.
Of more modern albums, I have to say, being a Flower Kings fan, Flower Power (both discs brilliant to my ears!) and Unfold The Future (likewise).
These would be my top five 'doubles'.

'666' by Aphrodite's Child is perhaps the ultimate prog double album, alongside 'Yeti' by Amon Duul II and 'Third' by Soft Machine. All are utterly unique. Otherwise, 'The Lamb...' and TFTO have long been favourites yet imo are less immediately accessible than their other albums.

Lift Your Skinny Fists... is the only double album I've listened to without thinking that it would be better as a single album or that it was a dissapointing output from an excellent band ***coughthewallcough***
