I like the helicopter on The Wall, the spinning coin on Gentle Giant's Octopus, and the elevator and crowd noises on Wish You Were Here. Also, though he may not be prog, I like the many, many times Roy Harper bursts into uncontrollable laughter on his albums.

I like the Dog sounds on Animals and whatever the drum synth sounds are on ELP's Toccata... I love those!

Owls hooting (found on Trace's "Birds Suite" and my own disc on the title track)
Fly buzzing (Title track of "Lamb Lies Down on Broadway")
Freight Train (on Weather Report's "Gibraltar")
Lonely Church Bells (on Vangelis' "Heaven and Hell")
Breaking glass (Gentle Giant - intro to "Runaway" and National Health's "Collapso")

actually, amused to death has one of the best effects ever recorded.
