I'd recommend Fish Rising from Steve, and as for Matching Mole I've only heard Little Red Record, so I can't suggest one album over another.  I've put myself in a Canterbury mood too.

I think my favorites of the Canterbury scene are Soft Machine, Caravan, and National Health. I'm always satisfied when I listen to either of those bands.

There's barely anything I've heard from the Canterbury scene which I don't enjoy...it's one of those rare slices of music which is pretty much perfect for me.
