I know that in the 60s and the 70s, EPs were also used to promote an album. So the artist would relese an EP with four or five songs from the album and then relese the whole album. EP also used for compilation of songs that didn't enter to a Certain album. Like Steven Wilson did with 4 1/2, An EP with a collation of songs that recorded during the sessions of Hand Cannot Erase and The Reven. Same thing for The Future Bites and the B-Sides Collection.

Yes indeed the 7" EP was a popular format in the sixties for releasing four quality songs (as opposed to an A-side with a throwaway song on the B-side), or for releasing 4 tracks from an album as a taster, of for anyone who didn't want to go to the expense of buying an LP. The Beatles (as an example) exploited the EP format very effectively.

The EP also went though a resurgence in the 1980's - the Cocteau Twins spring to mind - I seem to recall their non-album track releases were mostly in the 3/4 track EP format.

One of the very first prog records I ever bought was Pendragon's Fly High, Fall Far EP when it came out. In retrospect it's no masterpiece, but at the time to me it was magical (and it still has a certain naïve charm to my ears). Bear in mind that at the time, such was the odium in which prog was held in the UK, I had never actually heard any of the bands the neo-prog bands were influenced by.
For something a little more modern and adventurous, Aquaserge's Guerre: |

Miasma and the Carousel of Headless Horses - Manfauna EP (from 2007) is brilliant.
I love The Residents' Intermission EP too, but maybe you gotta be into The Residents... |

Like Silly Puppy mentioned earlier, pretty much any EP by Porcupine Tree is great. They usually put music on these EPs that were left off of their album for whatever reason, but even their "throwaways" were really good. I would also recommend looking at that EP list he mentioned in the RYM site which includes both Alice in Chains "Jar of Flies" and Godspeed You! Black Emperors "Slow Riot for New Zero Kanada", two of the best EP's ever (also previously mentioned by Cristi).
