I had some nice potato lump with butter, mustard and two lovely pieces of sylt

Sylte or Sylta, a pork head cheese seasoned with allspice, bay leaves, and thyme, is part of the traditional Christmas smörgåsbord, served on rugbrød or Lefse with strong mustard and pickled beetroots. Sylte is often prepared from other pork cuts than the head, especially the leaner versions.

When the heads are cooked, remove from the cooking liquid. Heads that will not be made into brawn are put on a platter and served right away, or allowed to cool and served cold. Heads that will be made into jam are taken and the meat cut off the bones and into coarse pieces.

I once caught a 25-ish pounds barracuda with my grandpa. I didn't eat it because those fishes apparently have a serious toxin, so I released it back into the ocean.
