What I've discovered is that the music I like most is played by pop bands who like to innovate and mix. The Beatles, Queen, Radiohead, and the Gorillaz come to mind as particular favorites. I think what these bands have in common is a determination to make entertaining, rich music in the best way possible for each track. Thus, they end up innovating. They're also all English, but that's not what I'm getting at.

Please share any other bands you feel are in this vein of music.

Well, I'm not exactly sure if this is exactly the same vein, but The Shins and Death Cab for Cutie/The Postal Service are definitely great pop bands that consistently keep it interesting. I always loved those groups.

Another is Anja Garbarek, from Norway. She's sorta... pop/experimental. Great things going on there!

Fiona Apple is pretty interesting. She has some Avant/jazz/symphonic touches in her music.
