well, i used to work as a sous-chef in a French gastronomy restaurant when i was around 20 y.o.; the chef had a sophisticated menu, and once i proposed him to put some meal photos of the best we offered at the entrance door. the paper of the menu looked like something very ancient, in the genre of burned papyrus. the chief said: "well, we cannot put some modern photos beside the menu"; i proposed him to put some well chosen ornament around the photos, and he agreed: we took about 8 hours working hard to enjance the menu presentation: the chief and I focused very hard on the meal presentation! the chef was afraid to lose all the mystery so strongly evoked by the only refined sets of words describing each meal in the menu.... we received feedback from customers: they liked the new presentation. Smile

it seems easy to present meals but you have to beware of the details: the best way to succeed is to act like a customer: what he would like to see and not to see? for instance, i think the smoked salmon plate above is not well presented firstly because the salmon touches the border of the plate: this looks disgraceful, and the chef shall never put food on the border of the plate because he puts his greasy fingers on it: it is almost like if you see a hair in your soup!

unfortunately, i do not eat anymore those meals nowadays since i become a veggie! so, my favorite veggie meal is chick peas with tomato sauce, salt, pepper, oignons and cheese! mmmmmmmm!

Hmm...I like all kinds of food, and have no real favorite. But I'll put a few of my favorite ethnic foods out there.

By the way: I'm not sure of the accuracy of these dishes in their native countries, as Americans tend to b*****dize foregn dishes, for better or worse.

Gyros and Baklava (Greece):

Tandoori Chicken (India):

North African Vegetable Soup (North Africa--Morrocco/Libya):

Sweet and Sour Pork with Cow Mein and Hot and Sour Soup (China - Southeast Asia):

And from our friends in Britain...

Tea...Thank God for the East India Trading Company (in this respect):

(I know, they imported it from India...but come on folks, they don't have much else in the culinary dept. )

Greek, yes! Does it look different from the original moussaka?

How does that one look then?
