Anyone have a good salmon or trout recipe? There's a market south of here that sells VERY good seafood (which is a rarity here in the midwestern United States) and I'm going to run out there on my lunch hour.

Simple but tasty salmon recipe - marinade in teriyaki sauce then bake.
Trout, hmm....maybe an almond crust then pan sear?

Oh man! That sounds like a good idea. Could even broil it and maybe add some shallots the the marinade. I like that a lot!

Salmon: sear in a pan or on a hot grill until just pink - serve with a cold dressing of your beloved EVOO, some mustard, dill and a tiny bit of sugar (well mixed of course). If you have access to sweet mustard (Bavarian style) you can leave out the sugar.

Trout: fill belly with fresh herbs (rosemary, thyme) and a few slices of lemon. Wrap in foil and bake in a 180 celcius the oven for about 15-20 minutes.

Just finished it up. Made steamed broccoli and a wild rice pilaf to go along with it. Turned out really good. I bought the teriyaki marinade, though, Cheated just a bit.

I actually found a teriyake style salmon recipe that was very easy. If memory serves, I think it was soy sauce, ginger, garlic, green onions, and honey. I could be missing an ingredient in there somewhere, though.

And completely understand. We have a 4 year old chainsaw with feet tearing through the house.

that sounds yummy....  not that that I miss them of course.. but first thing I'll have when I get back to the states is a big ass greasy cheeseburger with french fries smothered in mayo... ummm

BTW, today for lunch I made a great risotto with radicchio, red wine and Gorgonzola (put in at the end instead of the more common butter and Parmesan), then thinly sliced beef sautéed in a pan with rocket and cherry tomatoes (called 'straccetti', or little rags, in Italian), seasoned with salt, pepper and a splash of balsamic vinegar.

Next item on the menu in the AR mansion will be raspberry cheesecake, which I am planning to make tomorrow evening - not made with cream cheese as in the US, but with ricotta and Greek yogurt, and crushed amaretti (almond macaroons) for the base instead of graham crackers.

Edit: I just saw that today is Eric's 40th birthday - best wishes from both the AR team co-leaders, and many happy returns!Hug

Me, my wife (Laurie), and daughter (Emily) are going out to dinner tonight, too. Just haven't decided on where I want to go. I'm half thinking about this Irish restaurant in this little town called Weston. Where are you guys going?

My birthday is actually Tuesday.  The big 3-0 for me.  We're going to this restaurant:  http://www.trinacria-pa.com.  My in-laws are coming over to babysit - one of the major reasons we moved to Pennsylvania (they live about 20 minutes from us).

So happy birthday E!  Hope you get some good prog for your birthday.  LOL
