There are many bands who have 1-2 albums that I think is especially great. Many of my favourite albums come from that kind of bands. I could consider them "favourite bands" because of that 1 or 2 album/s , but I'll try to focus on bands with a more consistent output, who have put out more than 2 very great albums.

The Durutti Column

Black tape For A Blue Girl

The Church

Allerseelen

Simple Minds

A Northern Chorus

Mecca Normal

Sandra

Girnų Giesmės

It's hard to do a list like this. A lot of bands missing of course, but again, they are of the "One or two fantastic albums" category.

edit: No classical composers , to keep it simple.

I kind of cringe at these types of threads because inevitably I have to list artists that I think should be here but aren't, but I'll give it a go, off the top of my head.
Joni Mitchell
XTC
The Police
Sting
Joe Jackson
Stereolab
Joachim Kuhn
David Earle Johnson
Bruce Hampton
That's nine for you.
Released date are often when it it impacted you but recorded dates are when it really happened...
