hmmm... for Progressive rock solos i would say Echoes with Gilmour or Starless with Fripp.
For Non-Prog I would say All along the Watchtower with Hendrix or Then Came the Last Days of May (Live) with Buck Dharma.

For a solo one can sink their teeth into I'd probably give it to something by Gilmour or Page or Randy Rhoads.   But when you take away the bells and whistles and endless noodles, for me it begins and ends with Eddie's solo on 'Push Comes to Shove'.
